The dressing for this light and refreshing salad can be made up to 2 days ahead. Toss it with the salad just before serving.
white wine vinegar
2 1/2 teaspoons
salad greens, washed and torn
snow peas, trimmed & cut lengthwise into thin strips
seedless red grapes, halved
crumbled feta cheese
Combine first 6 ingredients in a small bowl, stir well with a whisk. Refrigerate until ready to use. Combine the salad greens, snow peas, red grapes and feta cheese in a large bowl. Drizzle dressing over salad just before serving; toss well.
