Field Salad with Snow Peas, Grapes, and Feta

Makes: 6 servings

Description: The dressing for this light and refreshing salad can be made up to 2 days ahead. Toss it with the salad just before serving.

Ingredients:
5 Tablespoons  white wine vinegar
5 Tablespoons  orange juice
2 Tablespoons  olive oil
2 1/2 teaspoons  sugar
1/2 teaspoon  salt
1/4 teaspoon  pepper
8 cups  salad greens, washed and torn
2 cups  snow peas, trimmed & cut lengthwise into thin strips
2 cups  seedless red grapes, halved
1/2 cup  crumbled feta cheese

Instructions: Combine first 6 ingredients in a small bowl, stir well with a whisk. Refrigerate until ready to use. Combine the salad greens, snow peas, red grapes and feta cheese in a large bowl. Drizzle dressing over salad just before serving; toss well.
