Pumpkin Crostini- Ingredients: 1 baguette --thinly sliced 1 c canned pumpkin 2 Tbsp olive oil 1 clove roasted garlic, minced 1 tsp brown sugar 1/2 tsp pumpkin pie spice salt and pepper to taste additional olive oil for bread Cream cheese for spreading Additional toppings (see below) In a food processor-blend pumpkin, garlic, brown sugar, olive oil, pumpkin pie spice. Pulse till combined. Take the slices of bread-line on baking sheet, coat tops with olive oil --I use a brush. Broil until bread turns golden--usually less than 5 min in my oven- spread a layer of cream cheese on each and top with pumpkin mixture. I have put mine back under the broiler for another minute at times just to warm it up--but it can be served either way. You can top these a variety of ways depending on what you have on hand-I have used pepitas, a sprinkle of garlic salt, arugula leaves, pecans, roasted garlic, Parmesan cheese, etc.
