This cookbook is not a warm and fuzzy kind of a book, but produces solid recipes with a ton of information about the hows and whys of lightening classic recipes. I've found 1 or 2 recipes that were a little "blah" but otherwise I consistently find these recipes to be quite tasty. And, even when I'm not following 1 of their recipes, I often use their techniques to lighten up a dish or just to know how best too cook something. I recommend this book to everyone!
