Description: Chicken Stir-Fry on Rice
Ingredients:
2 cups
mixed fresh veggies, cut-up (carrots, celery, beans, greens, whatever you have!)
1/4 cup
oil
3 Tbsp.
soy or teriyaki sauce or a mix of the two
1 1/2 cups
rice
1 cup
cut-up fresh or leftover chicken
Instructions: Rinse your rice in a strainer under warm water (it gets rid of excess starch), then place in a large pot with 3 cups of water. Bring to a boil, lower the heat to a simmer, and place a lid on it. Set your timer to 20 minutes for the rice. In a medium-to-large skilled, sauté your veggies with the oil til partially soft, then add the chicken and finish the cooking with the lid on - you may need to add more oil or a touch of water. Then add your sauces, a touch more water, and voila! Serve over the cooked rice. Easy, nutritious, and delicious!
