EASY Potato Bread

Makes: 2 loaves

Description: You'll never go back to plain white bread again after making this, it's softer, less crumbs and it stays fresh longer, and to top it off you can use any kind of potato or even, pumpkin, butternut or acorn squash. This makes a LOT of dough, divide into two large loaves or one really big one.

Ingredients:
1 cup  Milk
3 Tbsp  Unsalted Butter
1 cup  Baked, boiled or Mashed Potato
1 Tbsp  Sugar
1 1/2 tsp  Salt
1/3 cup  Warm Water
1 Tbsp  Active Dry Yeast
5 cup  Bread Flour
1/2 cup  Potato Water or Water

Instructions: Combine warm water & yeast and set aside until foamy. Combine scalded milk, 1/2 cup potato water, riced or mashed potato, butter, salt & sugar & let sit until room temp.
Combine all ingredients & add to bread machine on dough cycle and then divide into two loaves, let rise for 1 - 1 1/2 hours & bake in oven at 350ºf until golden brown, @ 30 min.

If you don't have a bread machine then just knead and let rise as you would any bread dough.
