Until about two years ago, I was a vegetarian. That was 23 years of non-meat eating. I didn't discover this cookbook until about 10 years into it and don't know how I did it! Deborah Madison is the owner of the San Francisco restaurant ,Greens, and really knows her stuff. Not only does she offer a cookbook that provides everything from basic techniques and recipes to more advanced and complex options, she does it in a way that is straight-forward, easy to follow and completely accessible. This cookbook remains one of my main go-to's and is what we give to our friends, vegetarians and carnivores alike!
