Makes: 6 bowls
Description: This curry chicken, pasta salad has the right balance of spice and sweetness, that the whole family will love. It can be served as a stand-alone meal or as a side dish! A perfect addition for a summer potluck.
Ingredients:
1 box
pasta
3
diced chicken breasts
3 tablespoons
mild curry powder (to preseason chicken)
1 1/2 cups
Hellmann's mayonnaise
1/4 cup
white wine vinegar
1/4 cup
honey
1 cup
diced celery
1/4 cup
chopped white onion
1/4 cup
chopped scallion
1/2 cup
raisins
1 cup
slivered almonds
Instructions:
Dice chicken breasts and season with salt and curry powder
Boil pasta as directed on package, set aside to cool
Cook chicken in a skillet, set aside to cool
Chop, celery, bell pepper, white onion and scallions
Once pasta and chicken have cooled, place all ingredients in a large bowl and mix
Refrigerate for about an hour and serve.
These stuffed peppers are super easy to make and are delicious as a full meal. You can choose any color pepper you like. I like orange!
