Crock pot fajitas - A combination of crock pot and skillet cooking for a fast week night meal for the whole family!
large boneless skinless chicken breasts
boneless chicken thighs
can of chicken broth
of cumin, garlic powder, chili powder, cayenne, S&P
bag of frozen bell peppers and onions
package of tortillas or taco boats
can of black olives - chopped or sliced
grape or cherry tomatoes
Add a small can of chicken broth to the bottom of a crock pot, season the chicken with the spices and lay the chicken on a bed of chicken broth and onions and cook on low for at least 4-5 hours. Then, chop up bell peppers or remove a frozen bag of bell peppers and onions to saute in a skillet. Once cooked down, shred the chicken from the crock pot into the mixture - adding as much of the liquid from the crock pot as you like. Cook all together for a bit and serve on warm taco boats.
