Made this today for St. Patrick's Day. Basically, mashed potatoes with onion, garlic and cabbage. It tastes great!!
about 1/2 cup
about 1/4 of a medium onion
for frying and to put into the mashed potatoes
add to mashed potatoes
This would be for 4 people.
While the potatoes are boiling, fry the cabbage - which you've cut up into small pieces; fry the garlic and onion in butter until the cabbage, garlic and onion are soft.
When the potatoes are done, mash as usual, then add the cabbage, onion, and garlic, and about 1/2 a stick of butter, and a little milk........don't make it mushy. Add a little milk at a time.
