Makes: 4 servings
Description: This came out delicious and juicy. First you marinate the chicken in the ingredients, and then you roast it. Easy!
Ingredients:
4 tablespoons
Sugar
2 cups
Strongly brewed coffee (Folgers Black Silk worked great)
2 cups
Water
2 tablespoons
Chili powder
1 tablespoon
Garlic powder (or you can use chopped garlic)
1 tablespoon
Ground cinnamon
3-4 pounds
Whole chicken, cut up
Instructions:
- Mix the first 6 ingredients together and then add the chicken.
- Marinate for 2-6 hours.
- Roast the chicken on 450 degrees for 15 minutes. Turn the pieces over. Roast for 15+ minutes more, or until the inside of the chicken is 180 degrees. (If you don't have a meat thermometer, just make sure the chicken isn't pink inside.)
- Let cool for a few minutes before serving. Enjoy!
