Description: This casserole dish uses hamburger for meat as it's protein base. Leftovers can be frozen and rewarmed in the microwave. A childhood favorite and still enjoyed today. Happy eating!
Ingredients:
1 Pound
Ground Beef
1 medium to large
Onion
1 clove
Garlic (optional)
1 large stalk
Celery (optional)
1 can each
Peas, corn, creamed corn, carrots
1 package
Instant mash potatoes
1 Tablespoon each
Paprika, salt, pepper
Instructions: Preheat the oven to 350 degrees fahrenheit. Cook the ground beef in a pan, remove and drain excess fat. Sauté onions, garlic, and celery, then return the mean to the pan. Line casserole dish with aluminum foil (for easy clean up), add the beef, celery, onion, and garlic mixture to the bottom, then add the first can of peas. Spread across the entire pan length. Top this with the corn, then the creamed corn, and finally the carrots. Make the package of instant mashed potatoes according to the package directions. You may need to make up two packages depending on the size of your casserole dish, and how deep you want your layer of potatoes to be. Spread over the meat and vegetable layers, then add paprika, salt and pepper to the top. Bake until top is golden brown (about 30-45 minutes), remove and let sit five minutes, and enjoy!
