Makes: 6 bowls
Description: Easy crockpot meal! Throw everything into the crockpot for 6-8h and then eat a delish dinner! Adjust the spice level to your preference by using spicier salsa or adding red pepper.
Ingredients:
1 pound
frozen boneless skinless chicken breast
24 oz
salsa (I prefer chunky salsa)
Two 30 oz cans
black beans, rinsed and drained
2 cups
frozen corn
8 cups
chicken broth
2 tsp
cumin
Instructions: Add chicken to bottom of crockpot, then top with remaining ingredients. Cover and cook on med-high for 6-8 hours. Near end of cooking time, remove chicken and shred. Then return chicken to crockpot. Cook for about 20 more minutes, then ladle into bowls, and serve with additional toppings of your choice (tortilla chips, sour cream, cheddar cheese, queso fresco, avocado, hot sauce...). Enjoy!
