Makes: 4 servings
Description: This is an easy, delicious meal that uses fresh ingredients and can be adapted to add whatever you have on hand.
Ingredients:
1 pack of 8 or 10
Chicken sausage
1
sweet onion
1 can
Diced tomatoes
1 ea
red and green bell peppers
1 can 4 oz.
mushrooms
3 cloves
garlic
various
spices you like (parsley, basil, ground anise seed, etc.)
2 Tbl.
olive or canola oil
1 package
Noodles, quinoa or rice
Instructions: Cook the sausage according to the package. Slice the onion and peppers and saute in oil until tender. Add the garlic, diced tomatoes, mushrooms and spices, cover and cook for 15 - 20 min. on med-low. While the sauce is cooking, slice the sausage into 1/2" - 1" pieces. Add the sausage and heat through. Serve over noodles, quinoa or rice.
