This chicken salad is low fat and delicious. In fact, I even got my fiance (who adores his junk and fast food) to try some and he can't get enough!
Boneless Skinless Chicken Breasts
Start by poaching the chicken: Boil the chicken broth. Add the chicken. Let boil for 10 minutes. Simmer, partly covered for another 15-20 minutes. Remove the chicken, place on a cutting board to let cool. Begin cutting the chicken into very small pieces and place in a medium size bowl. Once all chicken is in the bowl, begin adding the rest of the ingredients. Stir until everything is mixed well. I also add a small amount of pepper and salt to taste.
Refrigerate until chilled.
I like to add the chicken salad to wheat bread with lettuce and a fresh tomato.
