Chicken, Potatoes, and Green Bean Bake (Serves 2!)

Makes: 2 servings
This is a favorite one-dish oven baked staple in our home! It's easy and delicious, and clean-up is a breeze!
boneless, skinless chicken breasts
can of green beans (or 10 oz bag frozen; Fresh is even better if you have them!)
large baking potato
dry Italian or Ranch salad seasoning dressing mix
Preheat oven to 400.
Place two chicken breasts in middle of 9x13 dish. Line one side and end of dish with 1 can of drained green beans. Line the other side and end with one baking potato, peeled and cubed. Cube 2 - 3 Tablespoons butter and place atop all. Then drizzle all with 2 Tablespoons Olive Oil. Sprinkle one packet of dry Italian dressing mix (I use Kroger brand and it's delicious!) over entire pan. Cover with foil. Bake 40 minutes. Remove foil and bake ten minutes more. Serve and enjoy! ( I like to change it up sometimes and use Ranch salad dressing mix. It is also delicious!)
