Makes: 1 Pizza
This wonderful low carb crust, is not only tasty, but packed with veggies! It is do versatile, I have made it into cauliflower lasagna noodles, soft tortilla shells, muffins, quiche crust and cauliflower rice!
Place the shredded cauliflower and frozen kale in a microwave safe bowl and microwave for 8-10 minutes. Whisk the egg, and add quickly to the cauliflower, mixing rapidly to avoid cooking the egg. Add seasoning and cheese, mix well. Spread out on a parchment covered cookie sheet, pressing mixture firmly outwards to expand the crust. This should create a large sized pizza crust. Bake at 400 for 40 minutes or until crust is firm to the touch and slightly browned. Remove and place sauce and toppings, then bake at 350 for 15 minutes.
