Blueberry Omelette

Makes: 1 omelette

Description: Like crepes filled with fruit? Why not try filling an egg white omelette with fruit? Similar satisfaction with 1/10th the calories!

Ingredients:
1/2 c  egg whites
3/4 c  frozen blueberries
2 sprays  PAM Olive Oil

Instructions: Put frozen blueberries in a small microwaveable bowl. Spray a medium sized pan with PAM. Put pan on medium heat. Put frozen blueberries in the microwave for 30-45 seconds until completely defrosted (and even a little drainy!). Pour the egg whites into the heated pan. Lightly move the eggs around to ensure it is cooking. Add the microwaved blueberries to half of the egg whites. Flip the empty half of egg whites on top of the blueberry side. Cook for a minute...and slide onto your plate!
