Makes: 8 servings
Description: Dark and light greens dance together with sweet fruits and tart dressing. (Balsamic dressing recipe included)
Ingredients:
1 large head
Ice Burg lettuce
2 cups
Shredded Purple Cabbage
2 cups
Shredded Carrot
4 - 6 cups
Baby Spinach
1 head
Romane lettuce
2 cups
Grape Tomatoes
3 cups
Sliced Strawberries
3 cups
Sliced Dark Cherries
2 large
Sliced Cucumber
2 cups
Diced Avocado
3/8 cup
Balsamic Vinegar
5/8 cup
Extra Virgin Olive Oil
1 1/2 tablespoons
Honey
3 1/2 teaspoons
Brown Sugar
To Taste
Salt
To Taste
Pepper
To Taste
Garlic Powder
Instructions:
Wash and prep :
*Part 1: Ice Burg - Purple Cabbage - Carrots - Romane - Baby Spinach (Or you can use pre-mixed salad packs)
*Part 2: Grape Tomatoes - Sliced Strawberries - Sliced Dark Cherries - Sliced Cucumber - Diced Avocado
Either leave salad ingredients separated for salad bar style serving or toss together Part 1 and top served salads with Part 2 to taste
Top with my Simple Balsamic Vinaigrette Dressing
Combine Balsamic Vinaigrette - Extra Virgin Olive Oil - Honey - Brown Sugar - Salt - Pepper - Garlic Powder to taste
Wisk until well blended and almost creamy. You can adjust any of the ingredients up to taste. Tada! Dressing takes about 10 minutes to make. Chill ingredients and dressing before serving for an even more refreshing salad. The dressing makes enough for 8 standard side salads.
This salad can be warm or cold. It is delicious, zesty, and sweet. Packed with veggies and quite filling as well.
