Makes: 3 portions
Description: A fresh salad with some ham for protein and fruit, mixed with a light yoghurt dressing
Ingredients:
4 to 6
Endive (I calculate about 2 / person)
as desired
black forest ham or a milder form
as desired
pineapple / apple or mix thereof (for apple I use Granny Smith or another tart apple)
as desired
yoghurt dressing - bottled or home-made
as desired
salt , pepper, worcestershire sauce
Instructions:
Wash endive thoroughly and chopped finely into 1/2inch pieces.
Take small can of canned pineapple pieces and 2 tart apples - finely cut.
Add ham. I prefer black forest ham to add some meat flavor for the guy in the house;).
Make up a yoghurt dressing, mixing plain yoghurt, miracle whip, celery and garlic salt.
Add salt and pepper and some worcestershire sauce to taste - mix and let stand for about 30 minutes to 1 hour to let the flavors mix. Belgian endive is very sturdy and will not wilt with sauce added.
If there are leftovers, these can refrigerated and taste still good for the next few days - the endive will remain crunchy!
