Description: This is an old favorite of mine and my family, we love to explore different cultures through food and this is a delicious beef and rice dish thats simple to make.
Ingredients:
2-3 lbs.
Beef Stew Meat
2 tbl.
Oil
1 c.
Chopped Onion
1 c.
Chopped Celery
1 c.
Chopped Carrots
1 1/2 c.
Boiling (low sodium) Beef Broth
1 tsp.
Salt (optional)
1 tbl.
Flour
1 1/2 tbl.
Curry Powder
1/2 tsp.
Tumeric
1/4 tsp.
Paprika
1/4 tsp.
Ground Ginger
!/4 tsp.
Black Pepper
1 c.
Basmati Rice
2 c.
Beef Broth or Water
1 tbl.
Oil
Instructions: Heat oil. Mix all dry ingredients in cup, heat in oil to bring out the flavors. Add meat, stir and continue to cook until brown. Add Onion, Celery, Carrots , cook a few more min. Add 1 1/2 c. Beef Broth. Stir well. Bring to a boil, reduce heat, cover and simmer for 2 hrs, until meat falls apart and veggies are soft. In separate Pot heat oil. Add rice, cook until opaque then Add boiling Beef Broth or water. Cook rice for 20-25 min. When all is done plate the rice and top with the curry. Enjoy!!
