As many prepare for the celebration of Passover this year, you may be wondering what to make for dinner. Here are a few Passover-friendly dishes SheSpeaks members have shared that look absolutely delicious.

Bubby’s Vegetarian Matzo Ball Soup
This matzo ball soup recipe gives you both the perfect comfort food dish and a great vegetarian option to add to the menu. SheSpeaks member sozialzigi shares this recipe and says it always makes her think of home. She says, “Nothing says home more to me, than a comforting bowl of Matzo Ball Soup! While many think it has to be chicken broth, this easy recipe will not only warm you up on those cold winter nights, but make you smile from ear to ear. The best part, (if this soup isn't gone the first night), is it only gets better with time, so make a large batch and eat it all week!” With just a few ingredients and a 20 minute prep time, this soup is also a very easy and delicious option.

Long Island Coconut Macaroons
Please all of your sweet-loving visitors with this easy 5 ingredient desert recipe that includes just sugar, eggs, coconut flakes, chocolate chips and vanilla extract. The entire recipe from start to finish takes just 25 minutes. SheSpeaks member socialzigi shares this yummy recipe as well. She says, “These moist, easy to-do macaroons are a great thing to leave out as a tasty treat. The crisp outside shell, chewy soft inside is sure to delight! Coconut is rich in protein. This recipe is gluten free.”

Matzo Lasagna Pizza
When you put cheese, tomato sauce and matzo together - there’s not a whole lot that can go wrong. SheSpeaks member hollyshespeaks shares this fun matzo lasagna recipe that will probably be the first to disappear when you make it this year. She says, “This is the yummiest matzo pizza in the world. My kids love this recipe and it's fun to make.” This definitely sounds like a great one to make with kids since they will love watching it come together in layers and the extra perk of nibbling on mozzarella cheese is a huge plus.

Super Simple Salmon
Salmon is also a staple dish at many Passover dinners. SheSpeaks member JPAL7573 offers a very simple sauteed salmon recipe that will bring out the perfect flavor of this meaty fish. You should never over do-it when seasoning a quality cut of salmon, this recipe calls for just dried basil, garlic powder, lemon and salt for seasoning. And if you’re a novice in the kitchen, this recipe is pretty hard to mess up.

I love coconut so I was interested in the macaroon cookie recipe. With only 5 ingredients it's easy to make and consumes relatively little time. A warm macaroon cookie is a bit of heaven for your mouth - DEE-LISH!
