Description: Great fall chili that is kid friendly because it isn't too spicy. Lots of great flavors and uses the number one fall ingredient - pumpkin!
Ingredients:
1 tbsp
grapeseed oil
1/2
orange bell pepper, chopped
1/2
yellow bell pepper, chopped
1
red bell pepper, chopped
2
onions, chopped
3 cloves
garlic, minced
1/2
jalapeno pepper, seeds and membranes removed, chopped
1 lb
ground turkey
2 15-oz cans
pumpkin puree
1 28 oz can
crushed tomatoes
1 15-oz can
black beans, drained and rinsed
1 15-oz can
cannellini beans, drained and rinsed
1.5 cups
chicken broth
4 tbsp
Wildtree Chili seasoning (or a combination of cumin, crushed red pepper, chili powder and paprika)
Instructions:
In a large soup pot, cook the peppers, onions and garlic in the oil until soft. Add the ground turkey and cook until browned. Add the tomatoes, pumpkin, beans and chicken broth and stir until combined. Add seasonings and simmer for about 20 minutes. Alternatively, after you have cooked the onions, peppers and turkey, transfer everything into a crockpot and cook on low for 4 hours or high for 2 hours.
Garnish with cheese, avocado, hot sauce, chips, sour cream or whatever else you like!
