White Bean, Sausage and Kale Soup

White Bean, Sausage and Kale Soup

Makes: 4 bowls

Description: Nothing says fall like a pot of simmering soup on the stove. Everyone loves a steaming hot bowl of sausage, kale and white bean soup served with toasty Italian bread for dipping. The cold wind and icy rain outside are soon forgotten as the soup fills everyone's bellies with warmth and love.

Ingredients:
1 tbsp.  extra virgin olive oil
1  medium yellow onion, chopped
3/4 lb  sausage, casing removed
2  medium cloves of garlic
2  15oz cans of cannellini beans (white beans) rinsed and drained
1  large bunch of kale, rinsed and chopped
4 cups  chicken broth
1/2 tsp  red wine vinegar
to taste  salt, pepper, red pepper flakes

Instructions: I did this recipe x 4 to have enough for 10 people plus left overs!

in sauce pan-
saute onions garlic and olive oil till translucent
add sausage and cook thru, breaking up sausage into small pieces
while sausage is cooking, heat broth in soup pot, add kale
(you can use escarole, but it takes less cook time than kale, so I add it at the same time as the sausage and beans)
when sausage is all browned add to pot with broth
add drained rinsed beans,
cover pot,
simmer till kale is tender.
season with vinegar, salt and pepper to taste.
(we love a little heat and throw in 1tbs. red pepper flakes to the soup as it simmers)

I serve it with sliced italian bread, rubbed with crushed garlic and olive oil toasted under broiler!

This is an amazing soup! I also add a bit of heat (a dash of cayenne pepper, for me), and it makes all the flavors pop. One recommendation - make sure the kale is chopped into very small pieces. The first time I made the soup, I didn't chop the kale enough, and it made it somewhat difficult to eat. With the kale chopped small it it much easier to eat. Great flavors, easy to make - this recipe will definitely be a 'keeper'!
