Lazy Susan Cake

Makes: 10 Servings

Description: A recipe from my grandmother, and a family favorite. Its quick to make, and super yummy.

Ingredients:
1 ¼ c.  boiling water
1 c.  quick oats
½ c. + ¼ c.  margarine
1 c. + ½ c.  granulated sugar
1 c.  brown sugar
1 tsp.  cinnamon
½ tsp.  nutmeg
½ tsp.  salt
1 ½ c.  flour
2 tsp.  baking powder
1 tsp.  baking soda
3  eggs, beaten
1 c.  coconut
¼ c.  milk
½ c.  ground nuts (optional)

Instructions: Pre-heat oven to 350°. Grease pan (we use a 9x11, but can be done in an 8x8 or similar in a pinch).

CAKE

In small mixing bowl, pour boiling water over oats, add ½ c. margarine and let mixture stand for 20 minutes.

In larger bowl, mix together 1 c. granulated sugar, brown sugar, cinnamon, nutmeg, salt, flour, and baking powder, baking soda. Add in oat mixture and eggs, and beat well.

Pour into greased pan and bake at 350° for 35 - 40 minutes.

TOPPING

Brown ¼ c. margarine, coconuts, and ½ c. sugar in skillet over medium heat. Add in milk and cook an additional minute. Remove from heat and add nuts now if you're using them. Spread over cake, and enjoy!
