Breakfast in a Biscuit

Makes: 10 biscuits

Description: Very easy to make ahead and freeze. Pop one or two in the microwave on busy mornings and you're out the door in seconds! This would also be good for feeding a crowd since it's hard to fix individual eggs for everyone on the stove top.

Ingredients:
1 can  biscuits, small, 10 count
4  eggs
3 tbsp  milk
1/3 cup  cheddar cheese, shredded
1 cup  cooked sausage, bacon or ham

Instructions: Preheat oven to 400 degrees.

Whisk eggs and milk together along with a pinch of salt and pepper.

Roll out each biscuit until it?s slightly bigger than your muffin tin.

Spray the muffin tin with cooking spray and push one biscuit into each muffin cup - being sure to push it all the way down and up the sides.

Divide the meat and cheese evenly in each of the biscuit cups.

Pour egg mixture in, until 2/3 full. Don?t overfill.

Bake for 10 to 12 minutes or until biscuits are golden and eggs are set.

(You could also make these savory by adding taco seasoned meat and salsa to the eggs and cheese. )

Rolling out the biscuits was a mess; they shrunk as soon as I placed them in the tin. Easy way: use foil muffin tin liners and flatten the biscuits so they are securely in the bottom. Top with egg mixture, drop in a little pre-cooked meat, and top with a little cheese. These turned out great without the hassle of rolling out the biscuits. Onion & tomato are great additions too for filling. My son rated this almost as high as my strata. Who knew a 13 yr old was such a food connoisseur?!?!
