Artichokes in the Pressure Cooker

Makes: 2 2

Description: Delicious and good for you Artichokes prepared simply in the pressure cooker

Ingredients:
2 to 4  artichokes
1  spray oil
2 or 3  lemons
1 1/2 cups  water
5 cloves  garlic

Instructions: Trim stem of artichokes as well as clip leaves.
Spray the artichoke with just a quick spray of spray oil
Put water, lemon juice, and cleaned garlic into pot
Place artichokes in Upside down..stem up
Put on burner on high. When steam builds up, turn down burner and put pressure pot on medium pressure setting.
Turn timer on for 20 min. When the timer buzzes, release steam and carefully open pressure pot and then remove the artichokes.

Take the garlic, lemon, and artichoke infused water and place into a blender and puree until buttery smooth.
Use this as your dipping sauce instead of butter.

So good and so healthy...you wont miss the butter! Enjoy Y'all!

Easy recipe and artichokes come out delicious every time! Instead of lemon juice inside the pot and to avoid discoloration to the artichokes, after trimming and washing the artichoke, cut lemon in half and rub on stems and exterior leaves. Makes a beautiful presentation.

I was introduced to artichokes about 20 years ago by my husband's mother who would steam them and eat the heart and the end of the leaves dipped in butter. I've loved them ever since but have never tried them any other way. This recipe looks delicious - I can't wait to try it!! Thanks for sharing:)
